The restaurant captures the lively atmosphere of Europe’s great cultural cafés. Carefully positioned mirrors create a dynamic sense of connection throughout the dining room, encouraging guests to see and be seen. Above the open kitchen, a striking fresco by artist Ara Starck overlooks the culinary theatre, where each dish is prepared with precision over open flames.
At the bar, refined design meets playful storytelling. Wicker-covered bottles line the counter, celebrating the heritage of Catalan wines served through traditional taps. Guests can enjoy rare vintages, a relaxed lunch or lively conversations that continue long into the evening.

Pastry
La Pâtisserie brings the charm of a traditional neighbourhood pastry shop into the heart of the restaurant. Vintage white enamel displays showcase an exquisite collection of French pâtisserie classics.
Guests may enjoy their pastries on site or take them away. The selection includes iconic creations such as Paris-Brest, chocolate eclair or vanilla flan. Seasonal recipes also highlight exceptional Spanish ingredients, including local almonds, golden honey and Andalusian citrus fruits.

Executive Chef Adam Bentalha shapes the culinary identity of Brach Madrid. His cuisine draws inspiration from the Mediterranean, enriched with subtle influences from the Levant and the wider Orient. Working with exceptional local ingredients, he showcases Galician beef, red tuna and carefully selected olive oils. His approach combines generosity, precision and a deep respect for traditional charcoal cooking.
European Pastry Champion Fabien Emery oversees the group’s pastry creations. His work reinterprets the foundations of French pâtisserie through a contemporary and architectural lens. Every creation is prepared on site, from delicate morning viennoiseries to refined seasonal fruit tarts.
