The universe

n central Paris, Charbone moves to its own rhythm. An intimate dining room, warm golden light, carefully selected materials, an open kitchen, and a curated soundtrack on selected evenings.

Designed by John Whelan, the interiors draw on the 1930s and Art Deco through subtle details, without nostalgia. Urban, elegant and slightly cinematic, the atmosphere is made for lunch, dinner, and staying a little longer.

The cuisine

At Charbone, French cuisine is instantly recognisable: precise cooking, rich sauces, good bread, dishes to share, and desserts tempting enough to order before you have even saved room for them. Chef Adam Bentalha’s menu moves between individual plates and dishes to share, arranged around Hors du feu, Feu doux and Feu vif. Some of the finishing touches happen tableside: a sauce poured at the last moment, a dish carved in front of guests, a dessert flambéed. Flavour comes first, with just the right amount of theatre.

Signature dishes include the truffled croque-monsieur, Charolais beef tartare, chateaubriand flambéed tableside, Charbone Wagyu cheeseburger, pommes Darphin with caviar, and a fine apple tart to share. At lunchtime, a weekday menu is served from Monday to Friday in 45 minutes. In the evening, the lights dim, dinner settles into its rhythm, and music sets the tone.

Executive Chef of Evok Collection, Adam Bentalha brings to Charbone a style of French cooking that is accomplished, straightforward and generous.
